If whilst setting up WhatsApp on your new phone, you saw that the backup it wanted to restore was from a couple of days before, how do you skip the restore, do a backup and then restore that latest version?
It does not matter which phone your SIM card in is whilst doing this as long as it is in a phone so that you can receive the SMS authorisation codes. If it tells you you have to wait 7 hours for a code use the “Call Me” option to get a phonecall with the code.
Go to your OLD phone and setup WhatsApp to function on it, then do a backup by clicking on the hamburger menu (3 dots, 1 above the other) then select Settings > Chats > Chat Backup > Back Up [make sure to include videos if you want everything backed up, to restore to your new phone]
Wait for the backup to complete, whilst it is doing that you can uninstall WhatsApp from your NEW phone and then reinstall it.
Once the backup is complete, open WhatsApp on your NEW phone and follow the prompts until it asks if you want to restore and then restore the backup from minutes ago.
